Kofte Davud Pasha is one of the most famous dishes in Eastern cuisine, holding a special place on festive tables, especially during the month of Ramadan. This dish has a long history and many stories associated with it. Most stories agree that the name of this dish comes from an Ottoman governor named Davud Pasha, who was known for his great love for kofte, which became his favorite dish that he constantly requested to be prepared. According to one amusing story, he loved kofte so much that he would ask the chef to place a silver ring inside one of the balls. Another version, however, traces the dish back to the 19th century during the reign of Ottoman Sultan Mahmud II, when Davud Pasha was appointed governor of Baghdad. The method of preparing Kofte Davud Pasha begins by mixing minced meat with salt, onion, garlic, spices, and chopped parsley, then the mixture is kneaded well until it becomes firm and formed into small balls. In another pot, the onion and garlic are fried in ghee until they melt and turn golden, then the kofte balls are added and left on the heat for 15 to 20 minutes. They can also be baked in the oven. Some prefer to serve them without sauce with fried potatoes. Key ingredients: minced meat, onion and garlic, chopped parsley, ghee or oil. One story says that one day the chef made a mistake in preparing the dish, and for this, he was severely punished by the governor—an incident that people continued to tell for a long time. There is another version that attributes Kofte Davud Pasha to the era of Ottoman Sultan Suleiman the Lawgiver, when Davud Pasha Abdurrahman was appointed governor of Egypt.
